Tecnobake is designed for bakers working either in the catering business or in their own pastry shop. The professional combi Tecnobake oven offers maximum control over the cooking parameters to achieve excellent end results that are evenly baked.
Tecnobake models are also available with automatic self-cleaning, featuring four intensity levels, and a spray gun for manual washing. Detergents include rinse-aid solution.
The chamber is in AISI 304 stainless steel and sealed, and the silicone rubber door gasket is resistant to heat and ageing, and is solidly fitted to the oven front.
The cooking parameters can be changed while cooking is running.
The chef can use the recipes already provided in the cookbook, edit them and add personalised recipes to replicate successful dishes.
The digital ovens work with convection (50-265°C), steam (60-120°C), with a combi cycle (60-250°C) and with automatic preheating. The preheating temperature is the temperature of the first cooking cycle in the recipe. Tecnobake ovens work with direct heat. The boiler is provided only for the 20-tray models. In the mixed cycle you can manage up to 19 humidity levels at 5% intervals from 0% to 90%.
Tecnobake ovens offer impeccable cooking supported by precision engineering and rigorous tests. The deflector, which has been optimised with 320 hours of cooking tests, guarantees uniform heat distribution. Professional fans, controlled by an inverter and with four different speeds, stop instantly when rotation is reversed and when the door is opened, and enable controlled airflow. These ovens eliminate cold spots and overheating, guaranteeing uniform, top-quality cooking results.
Depending on the version selected, Tecnobake ovens offer versatile cooking with three different modes; convection, steam and combi. Automatic pre-heating ensures a precise temperature right from the start, while direct steam and humidity adjustment enable perfect results. A programmable initial steam puff is ideal for crisp and golden cooking.
The Tecnoinox range offers intuitive ovens, with electromechanical or digital and touchscreen models, with colour control panel and commands that simplify selecting options. These ovens can store up to 300 easy-to-find recipes, and can manage up to 8 cooking cycles. Parameters can be changed during the cooking process, to give chefs maximum freedom and offer an unprecedented cooking experience.
Maximum convenience
Simplicity, speed and convenience are combined in Tecnobake gas ovens, for a professional high-efficiency solution, which minimises any welding in contact with the flame for a more durable product. Tecnoinox patented heat exchangers increase the transfer of heat by 15% compared to the average, saving on gas consumption for a set quantity of work. Automatic power adjustment with two different levels further reduces waste and energy use.

Combining the Tecnobake oven with a blast chiller opens the doors for Cook & Chill, enabling chefs to prepare, cook and chill dishes in advance, guaranteeing easy reheating and maximum freshness. Reheated dishes preserve their organoleptic and nutritional properties, ensuring excellent quality at all times. With Cook & Chill, work process time are optimised, reducing waste and making it easier to manage service in the kitchen.
